Ingredients:
- 1kg free-range diced lamb
- 2 medium onions or 1 large onion, finely chopped
- 3 tomatoes, chopped
- 1 tbsp ghee or clarified butter
- 1 tsp whole garam masala
- 1 tbsp ground garam masala
- 1 tbsp ginger-garlic paste
- 1 tsp ground coriander
- 1 tsp Kashmiri red chilli powder
- 1 tsp Himalayan pink salt (adjust to taste)
- 1/2 tsp ground cumin
- 1/2 tsp turmeric powder
- 1/2 tsp asafoetida (optional)
- 100g yoghurt (optional)
- 1 bunch coriander, chopped (for garnish)
- 4 green chillis, sliced (for garnish)
Instructions:
- In a large, heavy-bottomed pan, heat 1 tbsp ghee. Add 1 tsp whole garam masala and let it sizzle for a few seconds.
- Add diced lamb, brown on all sides to seal in juices.
- Sauté finely chopped onions until golden brown.
- Add ginger-garlic paste, and cook for 1-2 minutes until the raw smell disappears.
- Add chopped tomatoes; cook until soft and oil separates.
- Mix in ground garam masala, ground coriander, Kashmiri red chilli powder, ground cumin, turmeric powder, and asafoetida (if using). Cook for 3-4 minutes.
- If using yoghurt, gradually add and cook until the oil separates.
- Pour enough water to cover the lamb, bring to a boil, then simmer covered until lamb is tender, stirring occasionally.
- Adjust salt and spices. Simmer uncovered for a thicker gravy if desired.
- Garnish with chopped coriander and sliced green chillis.
