Delicious Lamb Rogan Josh Recipe - Perfectly Spiced and Aromatic

  • 1kg free-range diced lamb
  • 2 medium onions or 1 large onion, finely chopped
  • 3 tomatoes, chopped
  • 1 tbsp ghee or clarified butter
  • 1 tsp whole garam masala
  • 1 tbsp ground garam masala
  • 1 tbsp ginger-garlic paste
  • 1 tsp ground coriander
  • 1 tsp Kashmiri red chilli powder
  • 1 tsp Himalayan pink salt (adjust to taste)
  • 1/2 tsp ground cumin
  • 1/2 tsp turmeric powder
  • 1/2 tsp asafoetida (optional)
  • 100g yoghurt (optional)
  • 1 bunch coriander, chopped (for garnish)
  • 4 green chillis, sliced (for garnish)


  1. In a large, heavy-bottomed pan, heat 1 tbsp ghee. Add 1 tsp whole garam masala and let it sizzle for a few seconds.
  2. Add diced lamb, brown on all sides to seal in juices.
  3. Sauté finely chopped onions until golden brown.
  4. Add ginger-garlic paste, and cook for 1-2 minutes until the raw smell disappears.
  5. Add chopped tomatoes; cook until soft and oil separates.
  6. Mix in ground garam masala, ground coriander, Kashmiri red chilli powder, ground cumin, turmeric powder, and asafoetida (if using). Cook for 3-4 minutes.
  7. If using yoghurt, gradually add and cook until the oil separates.
  8. Pour enough water to cover the lamb, bring to a boil, then simmer covered until lamb is tender, stirring occasionally.
  9. Adjust salt and spices. Simmer uncovered for a thicker gravy if desired.
  10. Garnish with chopped coriander and sliced green chillis.
