Ingredients

  • 4 large beef marrow bones
  • 1 loaf of sourdough bread, sliced
  • 1 large red onion, thinly sliced
  • 1 bunch fresh parsley, finely chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Method

  1. Prepare the Bone Marrow:
    • Preheat your oven to 400°F (200°C).
    • Place the marrow bones on a baking sheet, drizzle with olive oil, and season with salt and pepper.
    • Roast the bones for 20-25 minutes or until the marrow is soft and caramelised.
  2. Make the Sourdough Toast:
    • While the bones are roasting, toast the sourdough slices until golden brown.
    • Brush the toasts with a bit of olive oil for extra flavour.
  3. Prepare the Onion-Parsley Salad:
    • In a bowl, combine thinly sliced red onion and finely chopped fresh parsley.
    • In a separate small bowl, whisk together extra virgin olive oil, red wine vinegar, salt, and pepper.
    • Toss the dressing with the onion and parsley mixture until well coated. Set aside.
  4. Assemble the Bone Marrow Boat:
    • Once the marrow bones are ready, carefully scoop the soft marrow onto serving plates or into small boats for an elegant presentation.
  5. Serve with Sourdough Toast and Onion-Parsley Salad:
    • Arrange the crispy sourdough toasts alongside the bone marrow.
    • Garnish the plate with the zesty Onion-Parsley Salad.
  6. Enjoy!
    • Dive into the rich, buttery marrow spread on the toasts and balance the richness with the bright flavours of the Onion-Parsley Salad.

Pro Tip: Squeeze a bit of fresh lemon juice over the bone marrow just before serving for an extra burst of acidity.
