Meticulously crafted in-house using dry-aged British native breed brisket with a medley of exquisite spices. Cured in-house, slow-smoked to absolute perfection using time-honoured methods, our pastrami boasts a sumptuous, smoky essence that promises to tantalise your palate.

Crafted with Care: At That Fat Cow, we uphold a steadfast commitment to excellence, sourcing only the finest halal ingredients and employing traditional techniques. Starting with exceptional British cattle that is dry-aged for 28-days. It is butchered in house to leave a delicate fat cap, and then brined in a pickling mix including a range of spices and brown sugar for 10-days to cure.

Slow-Smoked Perfection: Our cured beef brisket is then coated in our secret pastrami spice mix and is slow-smoked to absolute perfection, infusing it with a sumptuous, smoky essence that enhances its natural flavours and textures. Our time-honoured methods ensure that every bite is a culinary delight.
